We tried out all kinds of knives, from santokus to paring knives to serrated Milk Street blades like the Tri-Edge and Kitchin-tan, and the results were consistent: professional-level, razor-sharp edges. How to Use: The sharpener can grind any blade ranging from 10 to 30 degrees. There’s also a 65-degree scissor guide and a variety of belts in multiple grits. Turn on the sharpening cassette—or grinding attachment if you prefer more freedom—and slide your knife along the belt from the heel to the tip, repeating and turning until it’s to your liking.
